  1. Get Potatoes (1-2 per person)
  2. Prepare Eggs (1 per potato)

  4. Take Shredded cheese
  5. Prepare Olive oil

Place the potatoes on a baking tray lined with aluminum foil or parchment paper. In a separate bowl, place in the potato flesh, eggs, cooked ham, onion, basil, salt, pepper, and garlic powder. Cook potatoes and onion in drippings until tender, stirring occasionally. Transfer the meat and potatoes in a bowl when cooked then let it cool.

Instructions to make Omelet potatoes:
  1. Bake potatoes in oven until cooked. Gently cut the tops off and remove insides, putting them aside in a bowl to combine later. (These potatoes make our "bowls" !!)
  2. (Optional) Cook whichever meat you choose for your recipe. I chose thick cut bacon which I chopped into smaller pieces
  3. In a large bowl combine eggs, meat, potatoes, and cheese. Whisk gently to mix ingredients. (Make sure to set aside a small amount of cheese and meat to top meal at the end). At this point you can also add seasonings if you prefer or leave it plain
  4. Spoon mixture into each potato "bowl" and top with cheese. Cook in oven until the eggs are no longer runny
  5. Remove from bacon and top with more deli meat. Let cool and serve!

Cook potatoes and onion in drippings until tender, stirring occasionally. Transfer the meat and potatoes in a bowl when cooked then let it cool. Wipe the saucepan with paper towels to get rid of excess oil then pour a little bit of new olive oil. Cook bacon in medium skillet on medium heat until crisp. Remove bacon from skillet to drain, reserving drippings in skillet.
