Besan Ladoo or Besan ke Laddu is a popular Indian sweet made from gram flour, powdered sugar and clarified butter (ghee). It might be known by various names, but this delicious laddoos of spiced and sweetened besan is famous all over the country. besan ladoo are made and relished for festivals, family events and different occasions. Some people also serve besan ke ladoo as prasadam.

To get started with this particular recipe, we have to prepare a few ingredients. You can have besan ke ladoo using 10 ingredients and 7 steps. Here is how you cook that.

The ingredients needed to make Besan ke Ladoo:
  1. Get 600 gms Mota Besan/gram flour
  2. Get 150 gms Bura Chini/Powder sugar
  3. Prepare 240 ml ghee
  4. Prepare 1 pinch saffron
  5. Prepare 2 tsp green cardamom powder
  6. Make ready 25 gms mixed nuts (pistachios, almond, cashew)
  7. Get 1 tbsp water
  8. Take Garnishing
  9. Take as needed Pistachios slivers
  10. Make ready handful Edible silver leaf (optional)

Besan Ke Laddoo is made by roasting gram flour and ghee together and adding sugar to make a thick pasty dough that is then formed into delicious, melt-in-your-mouth laddoos. Patience and a strong arm would be a pre-requisite to make these. Place a wok or pan on low heat. Besan Laddu are sweet balls made from chickpeas flour, sugar, clarified butter and nuts.

Steps to make Besan ke Ladoo:
  1. Deseed the Cardamom and grind it. Finely chop the nuts.
  2. Shift the Besan so that there are no lumps
  3. Heat ghee in a pan /kadai, when it melts add besan little by little so that no lumps form mixing after each addition…..keep the flame low.
  4. Keep on stirring so that it does stick to the bottom…..in between add the Cardamom powder too and keep cooking or roasting the Besan in the ghee till the nice roasted aroma of the Besan starts smelling….it almost took me 30-35 minutes on low to medium flame,adjust flame accordingly. Sprinkle about 1 tbsp water on the hot Besan* and keep stirring. Almost at the end add in the chopped nuts too.Once done put it in a steel plate and let it come to room temperature. It almost took me 1 hour plus.
  5. Once at room temperature add the BURA chini / sugar (Bura Chini is not regular powdered sugar but cooked and crystallized sugar made into powder)and mix well. Then form laddoos of desired weight. Here I could make 40 pieces of 20 (+/-) gms. While forming balls if you feel the dough is turning soft simply put it in fridge for 5-10 minutes and then you can easily form the balls or work in an AC Room.
  6. Garnish it with edible silver leaf (optional), pistachio or any other nuts you desire to. Pack it in Gift boxes and gift your near and dear ones this Diwali. Bon Appetit!!!
  7. Note : *sprinkling water on the hot Besan helps it to become grainy. Here I have used mota besan and not regular fine Besan.
