- Get 400 gms Atta/ Whole Wheat Flour
- Make ready 1.5 Cup Desi Ghee
- Make ready 50-60 gms or 1/4 Cup Gond/ Edible Gum
- Take 10-20 gms Kharbooje Ke Beej/ Melon Seeds
- Prepare 10-15 Badaam/ Almond Pieces
- Get 10-15 Kaju/ Cashews
- Prepare 400 gms Tagaar/ Boora/ Crushed Sugar

Steps to make Punjabi Pinni:
- Take a kadhai, add 1/2 Cup Ghee to it.
- Keep the gas on low flame.
- When ghee gets heated up, add Gond/ Edible Gum in it & fry them till they start swelling & turn slight brown in colour.
- After 3-4 minutes, when they swell properly, take them out in a plate.
- Now in the same ghee add Badaam & Kaju pieces in it & roast them till they start popping or sizzling.
- After 30 seconds-1 minute, when they start popping up, take them out in a the plate in which Gond is kept.
- Now take another pan, add 10-20gms Melon Seeds in it & dry roast them till they start popping up.
- After 30-40 seconds, when they start sizzling, turn off the gas & take them out in a plate.
- Crush Gond & dry fruits roughly.
- But keep some dry fruits in intact to garnish them on top of pinni.
- Now in the same kadhai or pan, add 1/2 Cup Desi Ghee in it & let it heat up.
- When ghee gets heated up, add Atta in it & mix it properly in ghee.
- If mixture is too dry add 1 Table Spoon Ghee more in it & mix it properly.
- Now roast Atta in ghee for 15-20 minutes on low flame till it turn into golden brown in colour.
- But don’t stop stirring it because Atta roasts quickly, so stir it continuously.
- After 15-20 minutes, when Atta turn into golden brown in colour & feels like sand texture, turn off the flame & transfer the roasted Atta in a big plate.
- Let it cool down properly.
- Don’t add boora, gond & dry fruits at this point because boora will melt in Atta because it is hot.
- After 20-25 minutes, when Atta is warm in temperature, transfer all ingredients- Roasted Atta, Crushed Gond, Dry Fruits, Melon Seeds & Tagaar/ Boora in it & mix them properly.
- If mixture is too dry, add some ghee in it & mix them properly.
- Make it in a typical Punjabi style shape or a simple shape of ladoo.
- Now garnish some Kaju & Badaam on top of them.
- Your Punjabi Pinni/ Ladoo are ready to be served.
