The ingredients needed to make Tea Fruit Loaf:
  1. Make ready 1 tea bag
  2. Prepare 300 ml boiling water
  3. Take 100 g dried mixed fruit
  4. Prepare 100 g raisins
  5. Make ready 75 g butter
  6. Make ready 100 g golden caster sugar
  7. Take 2 medium eggs, beaten
  8. Take 175 g SR flour
  9. Make ready Pinch salt

This tea loaf recipe combines Rooibos tea bags, mixed dried fruit and sweet brown sugar together to make a delicious cake that is complete with a generous helping of butter - the perfect afternoon treat. Put all the dried fruit into a bowl with the brown sugar and pour the hot tea over the top. Cover and let stand on the counter overnight. It's a lovely slice-able loaf, not too dense but fluffy and packed with fruit and lightly spiked with warm spices.

Steps to make Tea Fruit Loaf:
  1. Allow the tea bag to steep in the boiling water for 3 minutes. Remove the bag and add the dried fruit and allow to soak for at least 8 hours. Then drain fruit.
  2. Put the butter and sugar in a bowl and heat using a bain Marie until the butter melts. Stir round until the sugar is well mixed, and then add the fruit and mix again over a low heat for 3 minutes. Then allow to cool.
  3. Preheat the oven to 180°C and line 900g loaf time with grease proof paper.
  4. Mix the eggs and add to the fruit. Then add the flour and salt and mix again. Transfer to the loaf tin.
  5. Bake in the centre of the oven for 50 minutes. Test with a skewer.

Cover and let stand on the counter overnight. It's a lovely slice-able loaf, not too dense but fluffy and packed with fruit and lightly spiked with warm spices. The fruit is soaked in hot tea, which allows it to swell and plump up, as well as. To make a moist fruit tea loaf, first p lace the mixed dried fruit into a heat proof bowl and pour over the freshly brewed Yorkshire Tea. I always use Yorkshire Tea, but you can use any kind of breakfast tea.
