Bara brith (literally "mottled bread") is sometimes made with yeast but Mary's family recipe omits it, giving a wonderfully sticky texture. It is best spread with plenty of butter. This is not the traditional recipe for bara brith, meaning 'speckled bread' as the original recipe was based on a yeasted bread. However this version which is widely served, makes a beautifully moist cake as the dried fruit are soaked overnight in tea.

The ingredients needed to make Bara Brith:
  1. Get 300 ml strong hot black tea (made using 3 tea bags)
  2. Prepare 250 g mixed fruit
  3. Make ready 170 g brown sugar
  4. Get 225 g self-raising flour
  5. Get 1 1/2 tsp mixed spice
  6. Take 1 egg

Bara brith is a traditional Welsh tea bread made with mixed dried fruits (usually raisins, sultanas and dried currants) that are commonly soaked in tea overnight, candied citrus peel and mixed spice. Place the fruit and sugar in a mixing bowl, and soak overnight in the strained tea. Sieve the flour and mixed spice, and warm the marmalade. Add the flour, warm marmalade and egg to the soaked fruit.

Instructions to make Bara Brith:
  1. The night before baking mix the sugar and fruit in a bowl, pour over the tea and stir to dissolve the sugar. Leave the fruit to soak overnight.
  2. Grease a 2lb loaf tin. Preheat the oven to 170 C fan.
  3. Add the flour to a large bowl with a pinch of salt, add the egg and mix, then slowly add the soaked fruit and tea a little at a time, until a thick batter is formed. Pour the mixture into the prepared tin.
  4. Place into the preheated oven and cook for 40-50 minutes. A knife inserted should come out clean. Leave to cool slightly in the tin, then turn out and allow to cool completely on a cooling rack.

Sieve the flour and mixed spice, and warm the marmalade. Add the flour, warm marmalade and egg to the soaked fruit. Mix well, pour the mixture into a greased loaf tin. Bara Brith (Welsh Tea Bread) Bara Brith is a Welsh fruit loaf which is traditionally flavoured by adding tea, dried fruits and mixed spices. It is usually served sliced with lots of butter.
